Grandpop’s Turkey Soup

Ingredients:

4 Onions Chopped

4 Stalks Celery Chopped

Celery Leaves Chopped

2 Boxes Chicken Broth

4 Turkey Wings

2 Turkey Legs if Chicken Wings do not have enough meat

2 29 oz. Cans Tomato Sauce

Enough Water to Fill Pot

Poultry Seasoning

Pepper

Salt

Turkey Neck

Turkey Giblets

1 ¼ Cup White Rice (more if needed)

Instructions:

Add chopped onions, celery, celery leaves, turkey wings, legs, neck and giblets, chicken broth, salt, pepper, poultry seasoning and water to a stock pot. Bring to a boil and allow to boil for approximately 1 hour stirring occasionally. If it appears the soups is boiling away turn down sooner. Turn down to a simmer and add tomato sauce. Allow the soup to simmer with for a few hours. Stir occasionally and taste for seasoning. Add seasoning as needed. Once the meat is cooked, remove wings, legs, neck and giblets. Remove meat from the bones of the wings and legs and shred. You can throw away the neck and giblets. Return the meat back to the soup, be careful of small bones. Bring soup to a boil. Add rice and cook as instructed on the instructions. If it appears that there is not enough rice add additional rice and cook. Serve with grated parmesan.
